Freshly harvested persimmons are crushed and then undergo a freezing and thawing process, naturally reducing moisture while concentrating their sugars. This results in a deeper, richer sweetness and intensified fruit character.

The concentrated persimmons are then fermented with yeast and carefully aged at low temperatures for three weeks, creating a smooth, balanced profile with refined clarity.
