Description
A generously marbled cut with rich and beefy flavour taken from the cow's shoulder. Flavourful but can be quite tough due to the sturdy, elongated strip of connective tissue (known as gristle) down the middle. It is recommended to cook using slow cooking, grilling or stir-frying methods.
